Why chocolate needs to be tempered?
The tempering process required to all chocolate using pure cocoa butter, after tempering,the shine and smooth will make your chocolate with better taste and it becomes irresistible.
When couverture chocolate is melted, the cocoa butter molecules will become unstable. By tempering, you rebuild the cocoa butter crystals. There are multiple ways to temper chocolate ,in the microwave, oven, marble, sous vide ways, etc. but the most efficient and convenient way is to use a tempering machine, which is the significance for the existing of our tempering machine. When it starts melting,the machine will automatically keep temperature at 50ºC. After fully melted, heating system will stop working, then temperature drops to 28ºC and keep at 31ºC for further serving usage(temperature can be set depending on different types of chocolate).
